Method

1. Start by adding 1 tbsp of sun-dried tomato infused oil from the jar to a large frying pan on a medium/high heat. Add the pork mince to the frying pan and break it up slightly using your spatula. Leave the mince to brown for 5 minutes.

2. After 5 minutes, reduce the heat slightly and add the garlic, sun-dried tomatoes and grated courgette. Season with a pinch of salt and gently fry for around two minutes before adding the chicken stock and gnocchi.

3. Reduce to a low simmer for around 7 minutes, stirring occasionally.

4. After this period, the starch from the gnocchi should have thickened the sauce slightly and the gnocchi should be ready to eat. At this point, turn off the heat and add the lemon juice and creme fraiche. Stir until combined.

5. To serve, season with lots of black pepper, a pinch of salt and chopped fresh basil.
