These light and tasty Turkey and Courgette burgers are high in protein, simple to make and really tasty. A great alternative to beef, with a healthy twist of adding the grated courgette. A beauty!

Ingredients

  • 2 courgettes (£0.80)
  • 500 g (7% fat)turkey mince (£1.97)
  • 1 beef tomato (£0.55)
  • 2 little gem lettuces (£0.70)
  • 2 red onions (£0.75/3)=(£0.50)
  • 6 burger buns (£1.00)

Cupboard Essentials

  • 1 egg
  • 1 tbsp olive oil
  • 3-4 tbsp flour
  • 1 tsp mixed herbs
  • 1 tsp mayonnaise per person
  • 1 tsp tangy onion relish per person optional
  • Salt & Pepper

Method

  • Place the grated courgette in a bowl lined with a tea-towel. Add a pinch of salt to draw out the water and squeeze the towel until the courgette is fairly dry.
  • In a large mixing bowl, combine the turkey mince, flour, egg, mixed herbs, onion, grated courgette and a pinch of salt and pepper. Use your hands to ensure everything is evenly mixed, form into 6 patties. If the mix is feeling too wet (from the courgette) add another 1tbsp of flour.
  • Add the olive oil to a non stick frying pan on a medium heat. Fry each side of the burger for 7-8 minutes, don’t try to flip the burger beforehand as it may fall apart. When you know it’s ready, the bottom will be firm.
  • For the best burger, toast the burger buns with a griddle pan (no oil). Dry fry them for around a minute until they’re golden or have a little char. Serve each burger with some thinly sliced onion, lettuce, a slice of beef tomato and condiment of choice. I went for mayonnaise & relish but ketchup/sriracha/anything will go with these beauties.
