Method

Preheat oven to 180°C

1. Place the prepped veggies onto a large baking tray and glaze with olive oil. Add the spices into the tray along with the chopped tomato, using a spatula to ensure everything is evenly coated in the spices. Pop in the oven for 35M.

2. Once everything is roasted, assemble the tortilla in a large frying pan, with no oil and off the heat. Add the first tortilla wrap, then a layer of spicy tomato roasted veg, scattered mozzarella and finally grated cheese. If you want a crispy cheese spill, place a lot of the cheddar around the edge of the wrap.

3. Place the final wrap on top and then gently heat the pan on low. Heat one side for around 3 minutes and then rotate.

4. For an easy transition, place a plate onto the tortilla to flip it and then place the untoasted side onto the heat. Heat this side for around 5 minutes so the cheese starts to ooze out and get crispy around the sides.
