Ingredients
2courgettes(£0.80)
500g(7% fat)turkey mince (£1.97)
1beef tomato(£0.55)
2little gem lettuces(£0.70)
2red onions(£0.75/3)=(£0.50)
6burger buns(£1.00)
Cupboard Essentials
1egg
1tbspolive oil
3-4tbspflour
1tspmixed herbs
1tspmayonnaise per person
1tsptangy onion relish per personoptional
Salt & Pepper
Method
Place the grated courgette in a bowl lined with a tea-towel. Add a pinch of salt to draw out the water and squeeze the towel until the courgette is fairly dry.
In a large mixing bowl, combine the turkey mince, flour, egg, mixed herbs, onion, grated courgette and a pinch of salt and pepper. Use your hands to ensure everything is evenly mixed, form into 6 patties. If the mix is feeling too wet (from the courgette) add another 1tbsp of flour.
Add the olive oil to a non stick frying pan on a medium heat. Fry each side of the burger for 7-8 minutes, don’t try to flip the burger beforehand as it may fall apart. When you know it’s ready, the bottom will be firm.
For the best burger, toast the burger buns with a griddle pan (no oil). Dry fry them for around a minute until they’re golden or have a little char. Serve each burger with some thinly sliced onion, lettuce, a slice of beef tomato and condiment of choice. I went for mayonnaise & relish but ketchup/sriracha/anything will go with these beauties.
