Red Lentil and Coconut Soup
This Red Lentil and Coconut Soup takes minimal effort, is super filling and around 50p a portion!! Low in carbs, packed full of flavor and an ideal recipe for meal prep for the week.
Ingredients
- 150 g red lentils (£0.35)
- 500 g carrots (£0.29/2)=(£0.15)
- 1 tin of coconut milk (£0.75)
- 3 small onions/1 large (£0.55/5)=(£0.11)
- Bunch of fresh parsley (£0.29)
- Yogurt (£0.45)
Cupboard Essentials
- 1 litre vegetable stock
- 1 tsp turmeric
- 1 tsp curry powder
- ½ tsp cumin
- Chilli flakes
- 1 tbsp coconut oil
- Salt & Pepper
Method
Minimal effort, super filling and hella cheap (& obviously tasty).
- Roughly chop the onions, carrots and garlic. This will be blended later so it can be very rough!
- Gently sauté the onions and garlic in 1 tbsp of coconut or olive oil for around 6 mins season with the turmeric, curry powder and cumin.
- Once the onions have turned translucent, add the rest of the ingredients apart from the fresh parsley.
- Simmer on low for 30 minutes.
- Once the time is up, blend until you get your desired texture.
- Season with salt and pepper & serve up with some fresh parsley, a dollop of yogurt if you have some spare and some chilli flakes.
