Theyโ€™re high protein, low carb, and so delicious. You need to get these egg bites with cottage cheese into your rotation. With breakfast meal prep in the past, Iโ€™ve always found that more substantial things were better, like a homemade breakfast burrito, but these cottage cheese egg bites are so satiating and delicious.ย

  • Freezable~ this recipe makes 16 high protein egg bites, so if you fancied freezing half of the batch to grab at a later date to spread out your meal prep, that works too!

The main ingredients that make this Cottage Cheese Egg Bites recipe fantastic are the following:

Cottage cheese ~ I use full fat for the best flavor profile but if you want to reduce the calories you could use low fat. 

Turkey bacon ~ I love how lean it is, it has less salt and it crisps up nicely in the aifryer. You can definitely use regular crispy airfryer bacon though if you canโ€™t get your hands on turkey. 

Cheddar ~ the secret to these egg bites with cottage cheese is to haveโ€ฆ double cheese. Cheddar is sharp and intensely flavored, so I love the end result that it provides. You can sub with mozzarella for a less intense flavor if you wish.

Variations/ Adaptations

Change up the veggies ~ airfryer frozen broccoli,ย  leftover sauteed broccoli, roasted peppers, sauteedย  savoy cabbage, you name it- these cottage cheese egg bites are accommodating to most vegetables.ย 

Low fat ~ instead of 8 eggs, use the egg whites of 12 eggs (reserve the yolks for a tagliatelle carbonara) and substitute full-fat cottage cheese for low-fat. I would recommend that you keep the cheddar though for flavor.ย 

Vegetarian~ even though Iโ€™m such a fan of turkey bacon, you can definitely make this recipe vegetarian by omitting the bacon. Simply leave out or you could scramble some tofu (about 100g) until crispy to add into the mix. I wouldnโ€™t add it straight in as it might make your egg bites soggy. 

Add Meat~ for even more protein try adding cooked chicken. You can have it ready by using my how to boil chicken thighs or how to boil chicken tenderloins recipe.

How to make egg bites with cottage cheese

Preheat oven to 200ยฐC/400ยฐF.

  1. Step 1: Line your air fryer basket with foil and add the turkey bacon, spraying with a bit of oil. Cook for 10 minutes at 200ยฐC/400ยฐF (Image 1).

  1. Step 7: Sprinkle with a bit of extra cheese on top and bake for 12-18 minutes, or until the egg mixture is fully set (Image 7).

Tips for the best result

Incorporate even more protein if you fancy for your high protein egg bites with cottage cheese- once you learn how to cook chicken sausages the best way, chop them up and throw them into the mix.ย 

  • Avoid soggy veg! The key to the best texture with your egg bites recipe to use vegetables that donโ€™t release a lot of moisture. I.e. the ones that Iโ€™ve chosen. If you want to add mushrooms or courgette for example, cook them before adding into your egg mix to prevent soggy egg bites.
  • Season your high protein egg bites generously with salt and pepper before adding into your muffin tray.
  • Let them rest for 10 minutes in the tin for easy removal.

Storage, Reheat and Meal Prep Tips

In the freezer: Let the egg bites cool completely, then freeze in a single layer before transferring to a bag. 

Reheat: Just pop them in the microwave for 30โ€“45 seconds or for the best texture (hello crispy exterior), reheat in the airfryer at 180ยฐC for 5-7 minutes.

These high-protein cottage cheese egg bites are packed with turkey bacon, cheddar and peppers. Perfect for meal prep, no blender needed and freezer-friendly.

Ingredients

  • 150 g turkey bacon (ยฃ2.50)
  • 8 eggs (ยฃ1.50)
  • 2 romano peppers, finely diced (ยฃ1.55)
  • 300 g cottage cheese (ยฃ0.90)
  • 100 g cheddar, grated (ยฃ2.50/2= ยฃ1.25)
  • 3 spring onions, thinly sliced (ยฃ0.60)
  • 2 tbsp fresh chives, finely chopped (ยฃ0.52)

Cupboard Essentials

  • Oil Spray
  • Salt
  • Pepper

Method

  • Preheat your oven to 200ยฐC/400ยฐF.
  • To a foil-lined air fryer basket, add your turkey bacon. Add a few sprays of oil and cook at 200ยฐC/400ยฐF for 10 minutes.
  • Meanwhile, whisk the eggs and cottage cheese together. Once thoroughly mixed, stir the Romano peppers, spring onions, 1 tbsp fresh chives and two-thirds of the cheddar. Season with salt and pepper.
  • Spray a muffin tin with oil, then add a few spoonfuls of the egg mix into each hole, leaving about ยฝ cm from the top to allow some rise.
  • Top with the remaining cheddar and bake for 12-18 minutes, or until the egg is fully set.
  • Let rest for 10 minutes and finish with a sprinkle of fresh chives and a crack of black pepper.

Notes

  • For the best texture, stick with low-moisture veggies like the ones Iโ€™ve used.ย 
  • ย A generous pinch of salt and pepper before the egg mixture hits the muffin tray makes all the difference in taste.
  • Give your egg bites 10 minutes to cool in the tinโ€”theyโ€™ll firm up and release easily without falling apart.
