The simplest of roasts, with the crispiest roasties, fun veg, cost effective sausages, stuffing and of course Yorkshire puds. it's a bargain at £1 a portion.

Ingredients

  • 800 g potatoes, peeled and chopped into quarters (£0.49)
  • 500 g carrots, peeled and sliced (£0.49)
  • 500 g parsnips, peeled and sliced (£0.49)
  • 170 g sage & onion stuffing (£0.32)
  • 12 sausages (£1.00)
  • 12 yorkshire puddings (£0.50)

Cupboard Essentials

  • 400 ml gravy (£0.71)
  • 2 tbsp maple syrup/Honey
  • Salt & Pepper

Method

Preheat the oven to 200°C

  • Add the chopped potatoes to salted boiling water, timer set to 15M. After this time, drain the potatoes and add to a tray. Shake the tray to create a rough texture before coating with 2 tbsp of olive oil. Season with salt and pepper and pop in the oven for 40 minutes.
  • Placing the carrots and parsnips on a lined baking tray. Glaze with 1 tbsp of olive oil and 2 tbsp of maple syrup, using your hands to ensure every piece is coated. Season with salt and pepper and pop in the oven for 30 minutes.
  • Mix the stuffing with 400ml boiling water, mix and leave to stand for 5 minutes. Form into 8 balls and add to a small baking tray to cook for around 25 minutes. At the same time, place the sausages on a foil lined baking tray and pop in the oven for around 20 minutes or until browned.
  • Add the frozen yorkshire puddings to the oven and cook for 5 minutes. Prepare the gravy by adding some boiling water and pour into a jug. Distribute all the components between 4 and enjoy!
