Method

1. Start by removing the tough part of the asparagus stem and chopping into bite size slices. Roughly chop the broccoli too.

2. Add one tbsp of the jarred pesto into a non-stick frying with the quorn chicken pieces, asparagus and broccoli on a low heat. Cover with a lid.

3. After around 10 minutes, add the remaining pesto and the peas. Cook for a further 3 minutes.

4. Pop in meal prep containers and heat for 2 mins in the mic when it’s time to eat.
