Whenever I want something quick but really tasty, this oven baked fish is the first thing I make. It’s light, high in protein and perfect when you want something healthy. The lemon slices underneath keep the fish juicy without needing sauces or extra steps.   • 1-2 lemons sliced into rounds
  • fresh parsley

  • 2 tbsp extra virgin olive oil

Method

  • Preheat your oven to 400°F/205°C conventional.
  • Pat the fish with paper towel to remove any excess moisture. Coat the fish on both sides with the fish seasoning.
  • To a large baking dish, add a layer of the lemon rounds to cover the base of the tray.
  • Place the fish on top of the lemons, coat with extra virgin olive oil, and bake for 15–25 minutes, or until the fish reaches 145°F (63°C), adjusting the time based on fillet thickness.
  • Remove from the oven and add an extra crack of black pepper and a sprinkle of fresh parsley. Enjoy!
