  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 3 tbsp olive oil

Method

*Defrost the prawns*

1. Start by chopping the lettuce and rinsing with cold water through a colander. After rinsing, lay the lettuce onto a clean tea towel, folding the tea towel into a ball and popping into the fridge.

2. Combine the ingredients for the dressing by whisking the soy sauce, honey, olive oil, salt and red pepper flakes. If you have garlic granules you could also add a ¼ tsp into the dressing.

3. Remove the lettuce from the fridge & add to a large mixing bowl. Toss the lettuce with the dressing and cucumber ribbons. All you have to do to create the ribbons is use a peeler across the length of the cucumber.

4. Finally, add the sliced roasted red peppers & the cooked prawns to the salad and finish off with a squeeze of lime.
