That is why I absolutely love this recipe. All the time consuming work is already done. Someone else breaded and fried those fish sticks and then froze them just for us!

The best fish finger sandwich in my opinion is served between two freshly sliced, thick pieces of bread that have been lightly toasted. The contrast of the soft bread and crispy fish fingers really makes this combination work.
But I am here to tell you, the options for bread to use are vast. Any restaurant you visit may make a posh fish finger sandwich on a baguette, bagel, burger bun, brioche, sourdough…again, the options are endless.
So why not try one of those yourself and see which one you like!
There are many ways to top a fish fingers sandwich. Traditional sauces are ketchup, mayonnaise, tartar sauce, salad cream, and mustard. But there are some folks out there that swear by a mayo/ketchup mix as the best sauce.
In this recipe, we make our own mayonnaise/tartar sauce with capers to make this fish stick sandwich over the top on flavor!
And you don’t have to stop with the sauce! For fish sandwich toppings you may want to try lettuce, tomato, cheese, egg, pickle, avocado, or bacon. Honestly, I think I could do all of them and make it an ultimate fish finger sandwich!

Fish Fingers – These fish sticks are made from mild, flaky cod with a golden, crispy breading that will leave your mouth watering.
Capers – The bright burst of flavor from these briney buds takes the flavor of this flavorsome sandwich to a whole new level.
Mayonnaise – The mayonnaise here gives the whole sandwich a nice silkiness and helps marry the flavors from the fish, capers, and gherkins.

Preheat you oven to 360°F (180°C)
2. Wash the lettuce and dry with a tea towel (Image 2).
3. Roughly chop the capers and add them to a mixing bowl with the mayonnaise and juice of ¼ to ½ a lemon, depending on preference (Image 3).
4. Stir to combine. If you love the briney/salty flavour of capers, add ½ tsp of the brine from the jar into the caper mayo (Image 4).
5. Toast your thick slices of white bread for 1-2 minutes, until lightly toasted (we only want a light toast here)! (Image 5).
6. Add a layer of caper mayo onto each slice of lightly roasted bread (Image 6).
7. Then to the bottom piece, add a layer of lettuce, fish fingers, red onion, gherkins and a crack of black pepper (Image 7).
8. Add the top slice of bread and slice through the middle to serve (Image 8).
If you don’t have fish fingers, don’t worry, a frozen fish fillet will work just as well. You could also try cod fish that is not breaded or a whole different type of fish altogether. Some great options for this fish sandwich are hake, pollock, or haddock.
Vegetarians and vegans can replace the cod fish sticks with vegan fish sticks. And vegans can use vegan mayo.

The best tip I can give you with this sandwich is to eat it right away. While you can store it in the refrigerator, it will not taste as good. The texture of both the bread and the fish fingers will be compromised.
Will the bread get soggy in the refrigerator?
The bread may get soggy in the refrigerator if you have already added the mayonnaise mixture. I do not recommend storing any leftovers of this sandwich in the refrigerator.
Can you refreeze frozen fish sticks?
It is not recommended to refreeze anything that has already been cooked and frozen once. This sandwich is not freezer friendly.
Buttering the bread on a fish sandwich is a great way to add moisture and flavor. This type of sandwich is actually called a fish finger butty.
I don’t recommend making these sandwiches ahead. The fish fingers and the bread will not have the same consistency as when they are freshly made.
Most fish finger sandwiches are made with cod, but that doesn’t mean you can’t try out different types of fish. Some good ones are pollock, haddock, and hake.
Ketchup and mayonnaise are both good on a fish finger sandwich and the people are pretty divided on which is better, so it is up to you which one you want to go with. When in doubt, some people love a ketchup/mayonnaise mixture, known as fry sauce.
You can absolutely add cheese to a fish stick sandwich. Cheese makes everything better!
