Try this delicious Mexican inspired breakfast recipe, which is so quick and easy to make. Perfect scrambled eggs with a spicy twist. So tasty!

Ingredients

  • 3 medium eggs (£1.39/4)= (£0.35)
  • 2 tomatoes (£0.49/2)=(£0.25)
  • 50 g (¼ tin) black beans (£0.50)
  • Bunch of fresh coriander (£0.39)

Cupboard essentials

  • ½ tsp all season
  • ½ tsp chilli powder
  • ½ tsp cumin
  • Salt

Method

The cost per portion is reflective of buying the ingredients to make this 4 times (12 eggs, 1 can of black beans) etc.

  • Start by draining the black beans and adding them to a mixing bowl. Add the cumin & a pinch of salt. Stir so that the beans are evenly seasoned.
  • Whisk your eggs and season with the “all-season” and chilli powder. The all-season has salt in it so no need to add a pinch of salt here.
  • Pour your eggs into a non-stick frying pan on a low heat and continuously stir until your eggs are cooked to the consistency that you like. Cooking on a low heat prevents the scramble from having contrasting dry egg bits, with wet/raw egg bits as it cooks more evenly.
  • Plate up the eggs with 1 tbsp of the cumin black beans. Add some of the fresh tomato on top (you can dice it or slice it, whatever you fancy) and garnish with some fresh coriander.
